Grilled sausage
A grilled sausage is a pork, veal or beef sausage cooked on the grill and served in a bread roll or on a plate, and it is a simple hot dish of German Christmas markets, where the Bratwurst is eaten standing up, with mustard, in a few bites.
Which sausage to eat at a German Christmas market
The Bratwurst is most often a snack: grilled to order, slipped into a small white roll, with mustard. Two well-known grilled sausages carry a European PGI. The Nürnberger Rostbratwurst, protected since 2003, is served three at a time in a roll, the “Drei im Weckla”. The Thüringer Rostbratwurst is protected too, and at the markets it is grilled to order then laid in a split roll.
Where to eat a grilled sausage at a Christmas market
In Germany, Berlin, Hanover and Münster put the Bratwurst on their menus, and in Hamburg it grills next to the Fischbrötchen and the candied almonds. In Linz, in Austria, it sits alongside Leberkäse. In the Netherlands, Groningen serves its braadworsten, and the Efteling offers them along its paths.
Further east, Prague and Kraków count sausages among their chalet dishes, and in Budapest the grilled sausage is on the menu of the stalls on Vörösmarty Square. In Italy, the Tyrolean-style chalets of Arezzo, Florence and San Candido serve them, sometimes presented as Bavarian sausages.
In France, the sausage comes with different sides: in Rodez it is served with aligot from the Aubrac, in Castres with charcuterie from the Castres area, and in Beaune it is part of the food served on site.
