Foie gras is the liver of a duck or goose fattened by force-feeding, sold raw, semi-cooked or preserved, whole or as a block, and it arrives at the Christmas markets of south-west France and Alsace as a Christmas Eve purchase: the producers mostly sell jars, terrines and blocks to take home.
Where to buy foie gras at a Christmas market
In the south-west, Mont-de-Marsan advertises Landes foie gras, Périgueux Périgord foie gras, Toulouse foie gras from the Gers. Sarlat sells it semi-cooked, whole or preserved, Brive-la-Gaillarde duck and goose, and Dax, Agen, Bergerac and Montauban complete the list.
In Alsace, Strasbourg puts forward Alsace foie gras, Riquewihr a local foie gras, and Colmar and Obernai both offer it. Martigues and Cavaillon, in Provence, have it on their stalls too.
Christmas market or marché au gras: where to find raw foie gras
At a Christmas market, foie gras is bought ready to serve. Raw liver, to cook yourself, is more a matter for the marchés au gras of the south-west.
